Copy Cat Knorr Rice Sides Recipe

My husband is a HUGE fan of that packaged rice, and although tasty, the nutrition is severely lacking.  I thought why not try and make my own version, with super healthy brown rice.

Things you will need:

1 cup brown basmati rice
2 cups broth, any type (low sodium is best)
1 TB butter
1 packet Swanson Flavor Boost (for lower sodium use half of the packet)
1 package of mushrooms, any type, sliced
Half of a medium Onion, chopped
2 TB Balsamic vinegar

Directions

Cook rice according to the package using the broth instead of water.  (The ingredients I am showing are according to the directions on the rice we use here at home, so your rice might call for more or less liquid, but I think all rice is basically cooked the same...)  While the rice is simmering, heat a skillet on med heat and add half of a tablespoon of the butter, the onion, and the mushrooms until slightly softened, about 5 minutes.  Add the Swanson Flavor Boost and stir gently.  Add the balsamic vinegar to the skillet and bring down to a low simmer for about 10 minutes or until you notice that the juices in the bottom of the pan have thickened.  Once it has thickened take off the heat and set aside.  Once the rice is done, fluff with a fork and add the mushrooms and other half tablespoon o butter, and gently fold everything together.

Of course you can substitute any veggies really, like carrots and broccoli.  There's just something about mushrooms and balsamic that make my mouth water!
